AUNT SISSY'S CARROT CAKE 
1 1/2 c. Wesson oil
2 c. sugar
4 eggs
2 c. all purpose flour
1 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. vanilla
1 c. chopped pecans
2 1/2 c. grated carrots

Mix well oil, sugar and eggs. Combine and sift all dry ingredients and add to first mixture and mix well. Add vanilla, nuts and carrots. Pour into greased and floured 9-inch cake pans. (Makes 3 layers.)

Bake 25-28 minutes in preheated 350°F oven.
