AUNT CHARITO'S MEXICAN FRUIT
CAKE AND FROSTING
 
2 c. sugar
2 c. flour
2 eggs
1 1/2 tsp. baking soda
1 can (20 oz.) crushed pineapple (undrained)
1 c. chopped nuts

FROSTING:

2 c. confectioners' sugar
1 (8 oz.) cream cheese
1 tsp. vanilla
1 stick butter butter

Grease and lightly flour 13x9x2 pan. Mix all cake ingredients into pan. Bake at 350 degrees for 30 minutes.

Meanwhile, mix all frosting ingredients until creamy. Put on cake as soon as it comes out of the oven. Try sprinkling coconut on top for an added treat.
