MEXICAN FRUIT CAKE (EASY) AS
GOOD AS CARROT CAKE
 
2 c. flour
2 c. sugar
2 eggs
2 tsp. baking soda
1 lg. can crushed pineapple with juice

ICING:

1 (8 oz.) cream cheese
1 stick butter
2 c. powdered sugar
1 tsp. vanilla

Mix until cream. Ice cake while warm.

Mix cake ingredients, add 1 large can of unsweetened pineapple (crushed) with juice. Pour into greased and floured 9 x 13 inch pan.

Bake at 350 degrees for 35 minutes.
