BEEF JERKY 
3 lb. flank steak
1 tsp. salt
2/3 tsp. pepper
2/3 tsp. garlic powder
2 tsp. onion powder
1/2 c. soy sauce
4 tbsp. liquid smoke
2 tsp. monosodium glutamate
1/2 c. Worcestershire sauce

Trim fat, semi-freeze meat, then slice meat with grain, making strips long and thin. Place meat in shallow baking dish. Combine all ingredients and pour over meat. Marinate overnight.

Preheat oven to 140-150 degrees, lay strips on oven rack, place baking sheet or foil underneath, to catch drippings. Leave oven door open a crack. Bake 6-8 hours, or until meat is chewey.
