CRAWFISH FETTUCCINE 
2 chopped onions
2 green onions
1 bell pepper
2 sticks celery, chopped
1 1/2 sticks butter
1 tbsp. flour
1 tsp. chopped parsley
2 lb. crawfish tails
1/2 can jalapeno relish
1/2 lb. Velveeta cheese
1 c. half and half
12 oz. fettuccine
Parmesan cheese

Saute onion, bell pepper, celery, green onion or shallots in butter until soft. Add flour, parsley and crawfish and let cook about 15 minutes. Add jalapeno relish, cheese and half and half. Cook fettuccine until tender; drain and mix with crawfish mixture. Pour into a casserole dish and top with Parmesan cheese. Bake at 350 degrees for 15 minutes.
