CRAWFISH FETTUCINI 
2 lg. onions, chopped
3 bell peppers, chopped
1 clove garlic, minced
1/3 c. flour
1/2 bunch parsley
1 pt. half and half
1 (8 oz.) jalapeno cheese
1 lb. Velveeta cheese
3-4 lbs. crawfish tails (fresh or frozen), cooked
1 lb. fettucini noodles, boiled

Saute vegetables in butter. Add flour and parsley. Add half and half and cheeses, stir until cheese has melted and blended with vegetables. Add crawfish and mix well. Then pour crawfish and vegetable mixture into pot with fettucini noodles. Mix well. Then pour into casserole dish. Sprinkle with Parmesan cheese (fresh grated cheese is better). Heat slowly in oven (325 to 350 degrees) until heated through.
