COLD LEMON ZEST CHICKEN SALAD 
Easy and great for picnics or those hot days!

2 whole boneless/skinless chicken breasts
1 (8 oz.) box of shells or corkscrew pasta
Italian dressing
1 whole lemon
sliced pepperoni
shredded cheddar cheese (optional)

Cook pasta. Cook chicken and cube it. Mix together. Add Italian dressing to taste add to taste. Scrape the lemon skin off in shreds and add to salad. Squeeze lemon juice into salad and mix. Add sliced pepperoni. Cover and chill in refrigerator for 4-6 hours. Add cheese if desired.

Note: before serving, stir the salad as all of the juices will have gone to the bottom.
