CHICKEN SALAD WITH PINEAPPLE 
1 (14 oz.) can pineapple chunks, drained
2 1/2 c. cooked chicken, chopped
2 c. cooked brown rice
1 c. celery, chopped
3 tbsp. light mayonnaise
1 c. slivered almonds
1 tsp. original herb seasoning (American Heart Assn)

Mix the pineapple, chicken, rice, celery, mayonnaise, almonds and herb seasoning well. Chill. Garnish with fresh strawberries, orange slices or kiwi fruit. Makes approximately 7 cups.
