CHICKEN MACARONI SALAD WITH
PINEAPPLE
 
1 lb. chicken, cooked & shredded
1 lb. box macaroni, cooked
2 tbsp. sweet pickle relish
1 sm. sized onion, finely chopped (opt.)
20 oz. can crushed pineapple (sweetened juice), drained
Mayonnaise
1 big sized apple, cut in fine strips
4 med. sized boiled eggs
Salt & pepper (opt.)
Paprika

(Already cooked) macaroni in a large bowl, mix in cooked and shredded chicken, pickle relish, onion, crushed pineapple and five strips of apple. Season with salt and pepper. Add the mayonnaise dressing and mix together until everything is covered with mayonnaise. Slice boiled eggs on top of the macaroni salad. Then sprinkle paprika on top. Refrigerate overnight and ready to serve. Serves 5.
