CHICKEN BREASTS WITH MUSHROOMS &
CHEESE
 
2 whole chicken breasts, deboned & skinned
2 eggs, beaten
Dry bread crumbs
1/2 c. butter
1/2 lb. fresh mushrooms
5 slices Muenster cheese
1 c. chicken broth
1 lemon, halved

Sprinkle breasts with salt and pepper and immerse in eggs for 2 to 3 hours. Drain and roll in bread crumbs and brown in butter. Place in single layer in baking dish, cover with mushroom slices and top with cheese. Bake at 350 degrees for 30 minutes, basting several times with chicken broth. Squeeze fresh lemon juice over cheese just before serving.
