CARROT-APPLE-RAISIN SALAD | |
1/2 lg. apple, halved, cored 1 sm. carrot, pared 2 tbsp. raisins 1 tsp. lemon juice 2 tbsp. lemon or vanilla yogurt Cut the apple into 1/3 inch chunks and toss with lemon juice in a small bowl to keep it from darkening. Trim the ends of the carrot and cut it lengthwise into quarters, then into 1/3 inch pieces. Add the carrot, yogurt and the raisins to the apple and toss to combine. After spoon it into an insulated container. |
