PUMPKIN CAKE WITH CREAM CHEESE
FROSTING
 
CAKE:

4 eggs
2 c. sugar
1 c. Wesson oil
2 c. plain flour
1 can pumpkin
2 tsp. baking soda
1/2 tsp. salt
2 tsp. cinnamon

FROSTING:

1 stick butter
1 (3 oz.) cream cheese
1 box powdered sugar
1 tsp. vanilla

Cake: Cream sugar, eggs and oil. Add flour, soda, salt, cinnamon and pumpkin. Blend well with electric mixer. Bake 1 hour in preheated 350 degree oven in a greased tube pan or 2 loaf pans. (Check cake at 45 minutes the first time you bake due to ovens being different especially if using loaf pans.)

Frosting: Melt butter. Add cream cheese, vanilla and powdered sugar; beat with electric mixer until smooth. You may add a couple tablespoon of milk to help frosting spread easier. Frost cake when completely cooled.
