PUMPKIN CAKE WITH CREAM CHEESE
ICING
 
4 eggs
2 cups sugar
1 cup vegetable oil
2 cups canned pumpkin
2 cups all-purpose flour
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt

Combine all cake ingredients in a large mixing bowl. Beat with an electric mixer until thoroughly blended. Pour batter into a buttered and floured 13x9x2-inch pan.

Bake at 350°F for 35 to 40 minutes, or until cake tests done. Cool. Prepare Cream Cheese Icing.

Cream Cheese Icing:

1/2 cup (1 stick) butter, softened
1 (8 oz.) pkg. cream cheese
1 (1 lb.) box confectioners' sugar
2 tsp. vanilla extract

Combine icing ingredients in a mixing bowl. Beat with an electric mixer until smooth. Spread on cooled cake.

Variation: Try adding 1/2 cup of raisins or chopped pecans or walnuts to the cake batter.

Makes 10 to 12 servings.

I tried this one with a couple of changes: 1) Instead of 1 cup of vegetable oil, I used 1/3 cup canola oil and 1/2 cup of applesauce; 2) I used 1-1/2 cups brown sugar instead of 2 cups sugar. It turned out great! The cake is light but moist and there's lots of pumpkin flavor in it. I don't know if it made a difference or not but I used Wegmann's canned pumpkin which is strictly pumpkin.
