FRUIT/NUTTY BREAD PUDDING 
1 1/2 c. milk
1/4 c. honey
2 lg. eggs
1 tsp. vanilla
6 (1/2 inch) thick slices Raisin bread, cut into small pieces
1/2 c. raisins
1/2 c. nuts (pecans)
1/2 tsp. nutmeg

Pour milk, honey into a 4 cup measuring cup or bowl and microwave on high for 2 minutes (do not boil). In a small bowl beat vanilla and eggs together. Slowly pour egg mixture into warm milk/honey, stir constantly. Microwave on medium power 2 minutes, stir once halfway through.

Stir in bread crumbs, raisins, and nuts. Let stand 5 minutes, make sure bread crumbs abosorb mixture.

Pour mixture into 1 quart glass baking dish. Sprinkle nutmeg over top. Cover with wax paper and microwave on medium 8 to 12 minutes. Rotate the pudding twice. Remove and let stand 10 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
