BAKED FRUIT PUDDING PARENTE 
1 c. sifted flour
1 tsp. baking powder
1/4 tsp. salt
2 tbsp. shortening (liquid or solid)
2/3 c. sugar
1/4 tsp. cinnamon or nutmeg
1 egg
2 tbsp. boiling water
2 1/2 to 3 c. fresh or canned fruit
butter

Cream shortening and sugar (if solid is used). Add egg and continue to beat until well blended. Add boiling water then flour which has been sifted with baking powder and salt. Add desired spice and mix until flour is blended in.

Pour half of the batter into a small greased loaf pan or casserole. Spread the batter in a thin layer. Cover with half of the fruit. Top with the remaining batter and fruit. Dot with butter. Bake at 350 degrees for 35 to 45 minutes. For a glass dish, reduce heat by 25 degrees. Serve warm with milk or ice cream. Serves 6.
