PINEAPPLE CAKE WITH CREAM CHEESE
FROSTING
 
CAKE:

2 eggs
2 c. sugar
2 c. flour
1 (20 oz.) can crushed pineapple, undrained
2 tsp. baking soda
1 tsp. vanilla
1/2 c. chopped pecans (optional)

Beat eggs until fluffy. Add sugar and beat until thick. Stir in remaining ingredients and pour into 9 x 13 inch greased pan. Bake at 350 degrees until toothpick comes out clean, approximately 30-40 minutes.

FROSTING:

2 c. powdered sugar
8 oz. cream cheese, room temperature
1/2 stick butter
1 tsp. vanilla
Garnish nuts (optional)

Combine all ingredients and mix until fluffy. Garnish - may use nuts or fruit.
