BROCCOLI SOUP 
3/4 c. chopped celery (with leaves)
2 tbsp. butter
1 bunch broccoli
1/2 tsp. salt
1/4 tsp. pepper
1/4 c. chopped onion
1 c. milk
2 c. clear fat free beef broth

Cut broccoli into small pieces. In a medium saucepan gently cook celery and onion in the butter until wilted. Add broccoli, broth, salt and pepper. Bring to a boil; cover and boil gently until broccoli is tender (about 20 minutes). Puree. Stir in milk and heat. Makes about 1 quart. If soup is thicker than you like add broth or milk and correct seasoning.
