COACHELLA VALLEY DATE CAKE | |
1 lb. butter 3 c. brown sugar, packed 1/2 c. molasses 1 tsp. mace 1 tsp. cloves, ground 1 tsp. cinnamon 2 tsp. nutmeg 6 eggs 1/2 c. buttermilk 4 c. flour 1 tsp. baking soda 2 lb. pitted & chopped dates 2 c. chopped walnuts 1/2 lb. cherries 1/2 lb. pineapple 1/2 lb. lemon peel 1/2 lb. orange peel 1/2 lb. citron 1 c. jelly (grape, apple, etc.) 1 oz. brandy Cream butter and sugar; add spices. Add molasses and buttermilk. Stir well. Add slightly beaten eggs, brandy, flour and baking soda. Combine fruit and add to batter. Bake at 300 degrees for 2 hours in a 9 x 13 inch pan. Test with toothpick. |
