DATE PUDDING (CHRISTMAS) 
1 c. ground pecans
1/2 lb. dates, ground
6 eggs, separated
2 c. sugar
2 tsp. baking powder (heaping)
9 tbsp. cracker crumbs (heaping)
1 tsp. vanilla

Cream egg yolks and sugar. Add nuts and dates. Stir baking powder into cracker crumbs. (Add to mixture.) Add stiffly beaten egg whites. Mix well. Place in large baking dish that has a lid. Place in pan of lukewarm water and bake at 350 degrees until pudding is light golden brown and starts to fall away from edges of pan. Top with whipped cream.
