FROZEN CHRISTMAS PUDDING 
1/2 c. sugar
1 tbsp. cornstarch
1 1/2 c. milk
2 egg yolks
2 egg whites
1/8 tsp. salt
2 tsp. vanilla
1 c. heavy cream, whipped
1/2 c. mixed candied fruit, chopped
10 maraschino cherries, cut up
2 tbsp. cherry juice

Combine sugar and cornstarch and slowly stir in milk. Cook over low heat, stirring constantly, until it thickens. Then cover and continue cooking for about 10 minutes, stirring occasionally.

Stir a little of the hot mixture into the slightly beaten egg yolks, then stir them into the remaining hot mixture. Cook over low heat, stirring constantly for 3 minutes. Remove from heat and let cool. Fold in egg whites which have been beaten until stiff. Add salt and vanilla.

Pour into tray and freeze until firm. Remove mixture to bowl and beat with rotary beater until fluffy. Fold in the whipped cream and the remaining ingredients. Return to tray and freeze until firm. The pudding mixture may be placed in a mold during the final freezing period.
