COCONUT - PECAN QUICK CAKE 
1 1/4 c. all-purpose flour
1 c. firmly packed brown sugar
1 tsp. baking soda
1/2 tsp. salt
1/3 c. shredded coconut
1/3 c. chopped pecans
1 c. milk
1/3 c. salad oil
1 tsp. vanilla
1 egg

Preheat oven to 350 degrees. On ungreased 8 inch square pan add flour, brown sugar, baking soda, salt and coconut. Stir to blend. Stir in pecans. Add remaining ingredients. Mix well with fork. Bake 35 to 40 minutes or until done.
