CITRUS ORANGE ROUGHY 
4 Orange Roughy Filets
1 orange
1 lemon
1/2 tsp. black pepper
1/2 tsp lemon pepper
Italian bread crumbs
salt, to taste

Cut off 4 lengths of aluminum foil large enough to wrap each filet. Cut Orange and lemon into 1/8" thick round slices. Make a base of the orange and lemon slices on top of foil and place filet on top. Season top of filets with salt, pepper, and, lemon pepper. Any left over orange or lemon squeeze juice over top of filet.

Seal in foil so it is as air tight as you can get it. Bake for 12 - 15 minutes at 375°F, remove from oven. Open packet so top of filet is exposed, add a light coating of breadcrumbs to top of filet.

Leaving top of filet exposed; broil for 3-5 minutes until bread crumbs just start to brown.

This is a great, low fat, summer time dish, it goes well with asparagus or green beans.

Serves 4.
