“IMPOSSIBLE GREEK SPINACH & FETA QUICHE” IS IN:

IMPOSSIBLE GREEK SPINACH & FETA
QUICHE
 
6 oz. fresh spinach
6 oz. crumbled Feta cheese with tomato and basil
1/2 onion, chopped
1 tomato, chopped
1 1/3 cups milk
3 eggs
3/4 cup Bisquick baking mix
1/2 tsp salt
fresh ground pepper, to taste

Preheat oven to 400°F and grease a 10-inch pie pan and set aside. Steam the spinach while assembling the other ingredients and chopping the onion and tomato.

In a medium bowl combine milk, eggs, Bisquick, salt and pepper. Set aside.

Combine the spinach, onion, tomato and Feta and place in the bottom of the pie pan.

Pour the Bisquick, milk and egg mixture over the top.

Bake at 400°F for 25 to 35 minutes, until puffed and set.

Found this recipe to be so flavorful! Used a little more regular feta and used a little dry basil to compensate for not having the feta with tomato and basil. Layered spinach and vegetables then topped with egg mixture. No matter how it's assembled, it will be delicious. Thanks for sharing.

I was in a mood for a good quiche. Let me say this is an EXCELLENT, quick receipe. If you love Spinach & Feta this should be your go to recipe for Quiche. Hands down quick and easy. Prep time was less than 15 min and cook time was right at 35 minutes. Tons of compliments from the Family and workmates got the left overs. Pair it with your favorite wine and Enjoy!

Loved this, but made some of my own changes along the way by adding some things that my family & I like. I sauteed onions & mushrooms in olive oil and a teaspoon of butter, then added that to the spinach & feta mixture. This recipe was FAR better than the original spinach pie recipe I was given years ago--GREAT LIGHT MEAL!

This recipe was so easy to follow that my husband made this for supper without any help (he is not a seasoned cook either). He didn't steam the spinach but microwaved, covered with plastic for 35 seconds.This quiche was delicious!!!
