ED'S "I MADE IT MYSELF" CHILI 
2 lb. ground beef
1/2 lb. bacon (8 slices)
1 medium chopped onion
1 (15 oz.) can tomato sauce (Hunts)
1 (28 oz.) can crushed tomatoes
1 (12 oz.) can beer (your choice)
2 (16 oz. ea.) cans chili beans
2 tsp. chili powder
1 tsp. cumin
1 tsp. minced fresh garlic
1 tsp. paprika
1 (8 oz.) bag shredded four-cheese blend (Mexican "fiesta" style), for sprinkling

Cut up bacon in small pieces and cook till crisp. Save 2 tablespoons bacon grease in skillet. Add onion and all dry spices to grease. Stir till well mixed. Add ground beef. Cook till beef is brown and onions are tender.

In a separate pan put both cans of tomatoes, beer and beans. Add ground beef mixture when done. Add more chili powder to taste. Cook till thickened.

Put cheese on top to melt in bowls.

Serve with cornbread and crackers.
