2 lg. sweet potatoes, peeled, cubed and boiled
1 stick butter
1/2 c. sugar
1 egg
1 tsp. vanilla or lemon extract
1/3 c. coconut

Drain potatoes and mix with electric mixer add all ingredients. Pour into unbaked pie shell. Bake at 400 degrees for 30-40 minutes until shell are brown.
