SWEET & SOUR CHICKEN OR (PORK) 
4 lbs. pork chunks or chicken (I use chicken breast in strips)
1 can pineapple chunks
2 green peppers, thin sliced
2 lg. onions, thin sliced
1/3 c. brown sugar
1/4 c. vinegar
1 tsp. soy sauce
2 tsp. cornstarch
1 c. water or chicken broth

Save pineapple juice. Cook meat in a large skillet with water (or broth) until almost done. Add sliced peppers, onions and pineapple chunks and simmer for 1/2 hour. While above is cooking prepare sauce. Place brown sugar, cornstarch, pineapple juice, soy sauce and vinegar in a saucepan and bring to a boil, stirring constantly until transparent. Add the cooked sauce to the skillet, simmer for 1/2 hour. Serve over cooked rice. Delicious! (You can use shrimp.) Serves 6.
