HOLIDAY BANANA - NUT BREAD 
1 1/2 c. all-purpose flour
1 tsp. baking soda
1 c. sugar
2 eggs, beaten
1/2 c. butter, melted
1 c. mashed ripe bananas
1 tsp. vanilla extract
1/2 c. chopped pecans
1/4 c. flaked coconut
1/4 c. raisins

Combine first 3 ingredients; set aside. Combine eggs and next 3 ingredients in a large bowl; add flour mixture, stirring just until moistened. Fold in pecans, coconut and raisins.

Pour batter into a greased and floured 8 1/2 x 4 1/2 x 3 inch loaf pan. Bake at 350 degrees for 1 hour or until a wooden pick inserted in center comes out clean. Cool in pan 10 minutes; remove from pan and cool completely on a wire rack. Yield: 1 loaf.
