ZUCCHINI CASSEROLE 
4 c. sliced zucchini
2 eggs
1 onion, chopped
1 c. Parmesan cheese
2 tbsp. buttered bread crumbs
2 c. boiling water
1 c. mayonnaise
1/4 c. green pepper
1 tbsp. butter

1. Cook zucchini in water until just tender, drain.

2. In large bowl, beat eggs, stir in mayonnaise, onion, green pepper, cheese, salt and pepper.

3. Add zucchini, turn into a greased 1 1/2 quart dish, dot with butter. Sprinkle with bread crumbs.

4. Bake at 350 degrees for 30 minutes.
