MEXICAN LASAGNA 
flour tortillas (enough for a 9 x 13 pan, 2 layers)
1 can refried beans
1 lb. ground beef, cooked crumbly
16 oz. dairy sour cream
1 (8 oz.) pkg. cream cheese
1 pkg. Ortega taco seasoning mix
1 pkg. mild enchilada sauce

Mix sour cream, cream cheese and taco seasoning mix together.

Topping:

1 each colored pepper (green, red, yellow and orange), diced
1 medium red onion, diced
black olives, sliced
Colby-Jack cheese, grated

Make first layer with tortillas, beans, 1/2 cheese/seasoning mixture and meat. Make second layer with tortillas and 1/2 cheese mix. Cover with mild enchilada sauce.

Bake at 350°F for 30 minutes. Top with diced peppers, onions, olives and Colby-Jack cheese.
