SPINACH - RICE CASSEROLE 
1 (10 oz.) pkg. frozen chopped spinach
2 eggs, beaten
1 c. milk
1 c. shredded cheddar cheese
1 c. cooked rice
1/4 c. chopped onion
1 tsp. salt
Dash of pepper

Cook spinach just until tender, drain thoroughly. Combine eggs, 1 cup each milk, cheese and cooked rice. Stir in onion, salt, pepper and spinach. Pour into buttered shallow 1 1/2 quart casserole. Bake at 350 degrees for about 25 to 30 minutes or until set.
