RICOTTA COOKIES 
2 c. sugar
2 eggs
2 sticks butter
1 lb. Ricotta cheese

Sift: 1 tsp. baking powder 1 tsp. baking soda 1 tsp. vanilla or 1 tsp. lemon juice

FROSTING:

1 1/2 c. confectioners' sugar
5 tbsp. warm milk
1 tsp. vanilla

Mix up batter. Drop by teaspoon onto greased cookie sheet. Bake at 350 degrees for 10 to 15 minutes. Frost when cool. Makes 36 cookies.
