RICE PUDDING WITH MAPLE SAUCE 
1 c. rice
2 c. boiling water
1 c. milk
Pinch of salt (1/8 tsp.)
1/2 c. sugar
1/2 pt. (1 c.) whipped cream
1 tsp. vanilla
3/4 c. shredded coconut

MAPLE SAUCE:

1 1/2 c. maple syrup
1/4 tsp. vanilla
2 tbsp. butter

Slowly stir rice into boiling water, later add milk. Cook in double boiler or microwave until done. Drain, cool, put through ricer. Add sugar, flavoring, fold in whipped cream. Turn into mold or casserole dish.

Cook syrup until slightly thick. Add butter and vanilla and beat until smooth. Serve with Rice Pudding.

Since microwave ovens vary in power, you may need to adjust your cooking time.
