CREOLE SAUCE AND RICE 
1/2 c. butter
2 minced onion
2 minced green peppers
1 c. mushrooms
2 c. stock
1 qt. canned tomatoes
Salt & pepper
Cayenne
Bay leaf
Thyme

Beef - fish - pork - shellfish - poultry - wild game (deer, duck or squirrel).

Saute onions, peppers and mushrooms in butter for 5-8 minutes. Add remaining ingredients plus 1/2 cup rice and your choice of cooked meat. Simmer about 30 minutes.
