CRAB REMOULADE 
1/2 c. + 2 tbsp. salad oil
1/4 c. prepared mustard
2 tbsp. vinegar
2 dashes Tabasco sauce
2 tsp. paprika
1 hard boiled egg, chopped
1/2 c. mayonnaise
1/2 c. minced celery
2 tbsp. grated onion
2 tbsp. parsley
2 tbsp. minced green pepper
1 lb. crab meat, chunk
Lettuce leaves

Cut up lettuce leaves. Beat oil, mustard, vinegar, red pepper, Tabasco, paprika and egg yolk until thick (best if using a blender). Fold in celery, onion, parsley, green pepper and egg white. Gently stir in crab meat, cover and chill. Serve over cut up lettuce. Serves 4 to 5.
