BEAN SOUP WITH HAM BONE AND
VEGETABLES
 
1 lb. pkg. mixed dried beans, 15 varieties with lentils & seasonings
1 ham bone, with a little meat on it
1 lg. onion, diced
1 c. celery, diced
1/4 tsp. dill weed
1/4 tsp. sweet basil
Pinch of thyme
1/2 tsp. parsley
Salt & pepper to taste
1 lg. can tomatoes
2 c. mixed vegetables

Celery, broccoli, turnips, cauliflower, cabbage, corn, carrots, peas, or any combination you may have available.

Place beans in a large kettle and cover with cold water at least one inch above the beans. Boil for 5 minutes and pour off water.

Place ham bone in kettle with beans. Add diced onion, celery and seasonings.

After the beans are cooked tender, add the remaining vegetables. Do not over cook the vegetables. Add water as necessary.
