FRESH APPLE CAKE 
3 eggs
2 c. sugar
1 1/2 c. vegetable oil
1/3 c. orange juice
3 c. flour (1 plain, 2 c. self-rising)
1/4 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. vanilla
2 c. grated green apple
1 c. coconut (frozen)

Grease and flour pan. Mix first 4 ingredients, sift dry ingredients and add to egg mixture. Add last 4 ingredients with spoon. Bake 1 1/2 hours in tube pan at 325 degrees or 3 loaf pans at 325 degrees for 1 hour and 5 minutes. The loaf pans should be filled 1/2 full.

SAUCE MIXTURE:

Pour over the cake while still in the pan while it is hot! 1/2 tsp. baking soda 1/2 c. buttermilk 1 c. sugar

Bring to a rolling boil on stove and pour over the hot cake. Let it sit for a while. This cake will freeze well.
