FRESH APPLE CAKE 
2 c. sugar
1 c. chopped pecans
4 c. chopped apples
3 c. flour
1/2 tsp. cinnamon
1/2 tsp. salt
2 tsp. baking soda
1 c. oil
2 eggs, beaten
1 tsp. vanilla

Mix sugar, pecans, and apples and let set 1 hour. Stir in remaining ingredients. Grease and flour 1 tube pan or 2 loaf pans.

Bake at 350 for one hour and 15 minutes. Test at 1 hour. Loaf pans may take less time.

I was skeptical at first, but this is an awesome, easy recipe. It was a great was to use up some extra apples with ingredients everyone has on hand in the pantry. I made it in two loaf pans and it needed an hour to cook. Just keep incorporating the remaining ingredients into the apple/pecan/sugar mixture. It should be mixed very well.
