APPLE SPICE CAKE LITE 
3 tbsp. butter, softened
1 c. plus 1 tbsp. sugar
2 egg whites
3/4 c. skim milk
1 1/2 tbsp. vanilla
2 c. whole grain flour
1 tsp. baking powder
1 tsp. baking soda
2 1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ground cloves
1/4 tsp. allspice
2 c. diced apples
2 tbsp. finely ground pecans

Preheat oven to 350 degrees. Lightly oil a 9 x 5 inch loaf pan. Cream the butter in a medium bowl. Beat in 1 cup of the sugar, egg whites, milk and vanilla. Set aside. Combine separately the flour, baking powder, baking soda, 2 teaspoons cinnamon, nutmeg, cloves, allspice and apples. Stir the flour mixture into the liquid mixture, stirring just well enough to incorporate all ingredients. Pour batter into pan.

Mix the pecans, remaining 1 tablespoons sugar and 1/2 teaspoon cinnamon. Sprinkle the nut mixture on top of the batter.

Bake loaf for 45 minutes or until toothpick inserted in center comes out dry. Remove cake from pan and cool on a rack.

Serves 12.
