NACHOS CASSEROLE 
1 cup chunky medium taco sauce
1 (4 oz.) can green chilies or jalapenos, chopped
1 lb. ground beef
1 green or red bell pepper or 1 poblano pepper, chopped
1/2 cup chopped yellow onion
4 cloves garlic, minced
1/4 tsp. ground cumin
1 cup black beans or refried beans
2 cup shredded Cheddar cheese, divided
1/2 cup beef broth
4 cups tortilla chips

GARNISH:

2 ripe tomatoes, diced
dairy sour cream
green or yellow onions, minced

Preheat oven to 350°F.

Spray or brush a 8x12-inch glass baking dish with oil. Combine taco sauce and chilies in small bowl, set aside.

In a large skillet, brown the ground beef, peppers, onions and garlic. Drain. Add cumin, beans, 1 cup cheese, half of taco sauce mixture and water.

Cover bottom of dish with tortilla chips. Cover chips with meat mixture and top with remaining taco sauce mixture. Add remaining chips on top.

Bake at 350°F for 25 minutes. Sprinkle cheese on top and bake for another 5 to 10 minutes.

Garnish with tomatoes, dairy sour cream, green onions or minced yellow onions.

Makes 6 servings.

This IS very good. Made it with refried beans and ground turkey, just as flavorful. The nacho chips make this recipe. Easy clean up too!

This is seriously goooood! When I try a new recipe I sometimes make a tester. I made a fourth of it yesterday and shared it with a friend. We both agreed it's great. So today I went full bore and did the entire thing. First I mixed the chilies and taco sauce and set it aside. It wasn't until I was cleaning up that I found it still set aside. It had been in the oven 15 minutes by then. What do do? I took a spatula and scraped the chips to one end of the pan and dribbled the sauce over it. Then I scraped the other end and did the same. It's still good but nothing to take to the potluck. I would give this one ten stars!

This was very good, but I did worry about it maybe being bland because only 1/4 tsp of cumin is added. I ended up adding more cumin and I added 1/2 packet of taco seasoning and it was delicious! Also, it wasn't runny because the taco seasoning thickened it. I also think you could easily add sliced black olives as a garnish. Thank you for this recipe!
