BAKED STUFFED MANICOTTI OR
LASAGNE
 
1/4 c. oil
1 onion, chopped
2 garlic cloves, chopped
1 lb. Italian sausage, remove casings
1 pkg. frozen chopped spinach, thawed
1 c. ricotta cheese
2 tbsp. parsley, chopped
1 tsp. oregano
1 tsp. salt
1 tsp. pepper
1 (8 oz.) pkg. Mozzarella cheese, cubed
1/2 c. Parmesan cheese, grated

Saute oil, onion and garlic. Cook the sausage. Add to the next 6 ingredients. Stuff the uncooked MANICOTTI with this mixture. Place these in baking dish with some tomato sauce on bottom. Pour on the remaining sauce. Cover and bake 1 1/2 hours at 350 degrees. Remove cover, place slices of Mozzarella cheese on each manicotti. Sprinkle with Parmesan. Bake uncovered 10 minutes.

FOR LASAGNE: Place cooked lasagne over tomato sauce in baking dish. Spread filling (as above). Layer these with thin amounts of tomato sauce, ending with sauce. Cover and bake one hour at 350 degrees. Remove cover. Place slices of Mozzarella cheese on top and sprinkle with Parmesan. Bake uncovered 10 minutes.
