OVEN-FRIED FISH | |
2 lbs. catfish or snapper fillets 1 egg, beaten 1/2 c. Italian-seasoned bread crumbs 1/4 c. butter, melted 2 tbsp. lemon juice Dip fish into egg (beaten). Lightly coat with bread crumbs. Arrange fish in a single layer on a well-greased, shallow baking pan. Combine butter and lemon juice; drizzle over fish. Bake at 450 degrees for 15 to 18 minutes. Yield: 6-8 servings. |
