CANDIED SWEET POTATOES 
6 med. sweet potatoes or yams
3/4 c. brown sugar
1 tsp. salt
1/4 c. butter
1/2 c. miniature marshmallows

Prepare potatoes, scrub thoroughly, pare narrow strip of peel from center of each potato. Cook in boiling, salted water. Drain and peel after they have cooled.

Cut cooked and peeled potatoes in 1/2 inch slices. Layer potatoes in buttered 1/2 quart casserole with 3/4 cup brown sugar, 1 teaspoon salt, and 1/4 cup butter ending with sugar and butter.

Bake uncovered at 375 degrees about 30 minutes or until glazed. Add 1/2 cup miniature marshmallows for last 5 minutes; brown lightly. Serves 8.
