TOP OF STOVE CANDIED SWEET
POTATOES
 
6 med. sweet potatoes
2 tbsp. butter
1/2 c. coarsely chopped walnuts
1/2 c. brown sugar
1/2 tsp. salt
1/3 c. water
Dash cinnamon

Cook potatoes till tender. Peel and halve lengthwise. In wide skillet, simmer next 5 ingredients till sugar dissolves. Add the potato halves; simmer 15 to 20 minutes, turning occasionally, till potatoes are glazed and syrup thickened. Sprinkle with walnuts.

I dont have an oven but I have five cans of yams (from food bank) from before my oven went out. I just used them in place of cooking raw yams. This was excellent and my picky roomies loved it too. Next time I'm going to add a pinch of clove just because my mom made hers with clove and I'm used to my sweet potato having that hint of clove flavor.

Another FAST way to create this same recipe. Prep sweet potatoes as said... Then peel. I mash the potatoes - put butter over (until it melts)... then simply pour "maple pancake syrup" over. This is totally candied.....as pancake syrup usually has brown sugar anyway. Found this out one winter - when I could not get out of the house due to snow. Its a winner, simple, quick and cheap!
