2 c. Bisquick mix
2 tbsp. sugar
1 egg
2/3 c. milk (or water)
Streusel topping (listed below)

Heat oven to 400 degrees. Place muffin liners in muffin tins or tins can be greased. Mix all ingredients except topping with wooden spoon, beat vigorously for 1 minute. Fill each muffin cup 1/2 full. Sprinkle Streusel topping over batter and bake for 10 to 12 minutes. Serve warm.

STREUSEL TOPPING:

1/4 c. sugar
2 tbsp. Bisquick
2 tsp. cinnamon
2 tbsp. firm butter

In a small mixing bowl, mix until crumbly using a fork.
