SPINACH AU GRATIN | |
1 lb. spinach, finely chopped (fresh or frozen) 1 tbsp. lemon juice 3/4 c. grated Cheddar cheese 1 c. med. white sauce, heated 4 slices bacon, crisply fried 3/4 c. cracker crumbs 1/4 c. melted butter Cook spinach 2-3 minutes. Drain well and set aside. Add lemon juice and cheese to white sauce, stirring until cheese melts. Mix with spinach and pour into a 1 quart baking dish. Crumble bacon over top. Sprinkle with cracker crumbs combined with butter. Heat at 350 degrees for 20 minutes or until crackers are brown. |
