COUNTRY POTATOES 
6 med. potatoes
1 1/2 c. sour cream
3/4 c. chopped green onions
Salt & pepper to taste
1 3/4 c. grated sharp cheese

Cook sliced potatoes in salt water. Drain and mash, leaving lumpy. Add butter and sour cream, onions, salt and pepper and half of the cheese. Cook in 350 degree oven for 25 or 30 minutes. Just before taking out of oven, add the remainder of cheese and let it melt. Serves 6 to 8. Add bacon bits, if desired.
