FRIED RICE 
1 onion (1/2 c.), chopped
1/2 c. chopped celery
1 tbsp. oil
Soy sauce
3 c. rice, cooked
1/2 c. leftover ham, pork, beef or chicken, cut into bite-sized pieces, cooked
1/2 c. leftover vegetables (carrots, peas, broccoli), cooked

Saute onion and celery in oil in large skillet until tender, 3 minutes. Add rice or other grains. Stir to separate kernels. Add meat and vegetables. Cook, stir constantly, just to heat through. Add soy sauce to taste.
