SPINACH PROVENCAL 
lb. fresh or frozen spinach
1 lg. onion
1 clove garlic
Olive oil
Butter
2 eggs, beaten
1 c. fresh grated Parmesan
Salt and pepper

Wash fresh spinach. Chop onion and garlic. Heat olive oil in a large skillet, saute onion and garlic. (Until onion transparent.) Add spinach (fresh). If using frozen cook according to bag directions.

Stir spinach into onion and garlic. Cook a few minutes longer. Remove from heat. In a medium size baking dish which you have buttered add spinach which you have cooled slightly. Stir in 2 beaten eggs, 1/2 cup grated Parmesan. Season with salt and pepper to taste.

Pour mixture into baking dish - sprinkle the remaining Parmesan cheese on casserole. Dot with butter. Bake at 375 degrees for 10 to 15 minutes and serve hot. Serves 4.
