RHUBARB COBBLER 
Crust:
1 c. flour
3/4 c. oatmeal
1 tsp. cinnamon
2/3 c. brown sugar
1/2 c. butter, melted
Filling:
1/2 c. sugar
1 c. water
3 tbsp. cornstarch
1 tsp. vanilla
4 c. diced rhubarb

Preheat oven to 350 degrees. Combine crust ingredients and press half of this mixture into an 8 x 8 inch pan. For filling, cook 1/2 cup sugar, water, cornstarch and vanilla until thickened. Add rhubarb and mix thoroughly. Spread over the crust and top with the remaining crust mixture. Bake for 1 hour. Serve warm or cold.
