COOL RISE WHITE BREAD 
5 1/2 - 6 1/2 c. flour
2 pkgs. active dry yeast
2 tbsp. sugar
1/4 c. shortening or oil
2 1/4 c. hot tap water
Pam spray

In large mixing bowl, place 2 cups flour, yeast, sugar, salt and shortening. Add hot water all at once. Mix on medium speed of electric mixer for 2 minutes. Add 1 more cup of flour. Mix on high speed for 1 minute. Stir in remaining flour. Turn out on floured surface, knead for 5 to 10 minutes. Cover with plastic wrap then a towel. Let rest for 20 minutes. (I place dough on cookie sheet covered with plastic wrap and towel and place in barely warm oven with door ajar.)

Punch down. Divide dough into 2 portions. Roll with rolling pin into 8"x12" rectangle. Roll tightly into loaves. Place in loaf pans that have been sprayed with Pam. Cover loosely with plastic wrap. Refrigerate 2 to 4 hours. When ready to bake let stand uncovered at room temperature 10 minutes, while heating oven to 400 degrees. Break any surface bubbles with an oiled toothpick. Spray tops of loaves with Pam. Bake for 30 to 40 minutes. Remove from pans immediately to cooling rack. Brush with butter.
